Autumn Chia and Stewed Peach Pudding

Chia pudding is just about the perfect food. Chia seeds boast wonderful health benefits from fiber to magnesium to quality protein. In addition, they score highly from a tridoshic / Ayurvedic perspective, especially during Vata season (Autumn).

This simple recipe takes chia pudding up a notch to make it the most nourishing, holistic version of itself for the season. This recipe uses Vata balancing spices and plenty of fat and moisture to fill you up and promote digestion, uterine / menstrual health, and an overall sense of vibrancy.

Ingredients

  • 4 tbsp chia seeds
  • 1 (15oz) can coconut milk
  • 6 large peaches
  • 3/4c water
  • 1/4c maple syrup
  • 2 tsp cinnamon
  • Approx. 1 inch of fresh ginger
  • 1 tsp graham masala
  • 1/2 tsp allspice
  • honey to taste
  • small container full fat Greek yogurt
  • yields 4 servings

For the pudding

  • 1-2 tablespoons chia seeds to 1/4 cup full fat coconut milk, depending on how thick you like your pudding
  • Shake up a can of coconut milk to disperse the cream layer
  • Pour it into a mason jar
  • Add 4 tablespoons chia (a can is typically 1.5 cups, so this recipe will yield moderately thick chia)
  • Close the jar, shake it up, and refrigerate 12 hours or more
  • I recommend spinning and shaking the jar a couple of time an hour for the first few hours
  • I’d often add vanilla, salt, or sweeteners, but for this recipe, just plain pudding is perfect as the pudding will be layered with other flavors

For the peaches

  • 1.5 pounds (for me this was 6 large) ripe peaches, skinned and sliced into 8-10 pieces each
  • 3/4c of water
  • 1/4c maple syrup
  • 2 tsp cinnamon
  • Approx. 1 inch of fresh ginger depending on your taste, skinned and diced small (or sub dry ginger or omit)
  • 1 tsp graham masala
  • 1/2 tsp allspice
  • Put all ingredients in a pot, covered, over low heat for 20-30 minutes, until peaches are tender but not falling apart
  • Remove from heat & allow to cool
  • Pour into a large mason jar or two and refrigerate overnight

Assembly

  • Spoon 3-4 heaping tablespoons pudding into a bowl
  • Add 2 tablespoons full fat Greek yogurt
  • Add 1-2 tsp honey
  • Top with 4 peaches and a small amount of juice from the jar
