This no-bake cookie recipe satisfied the hunger of a whole neighborhood today. Perfect as breakfast, dessert, and anywhere in between, these bites are packed with stuff you’ll actually want to eat.
- 1/4c butter
- 1/4c milk
- 1/2c brown sugar
- 1/2c date syrup
- 2 tbsp unsweetened cocoa powder
- 1/3c nut butter
- 1 tsp vanilla
- 1-1/2c rolled oats
- 1/4c hemp seeds
- 1/4c flax seed (ground)
Combine butter, milk, sweeteners and cocoa in a saucepan & heat slowly until butter melts, stirring often.
Once melted, boil the mixture for 1 minute, stirring constantly.
Remove from heat.
Stir in nut butter & vanilla, then add everything else.
Spoon onto parchment lined baking sheet.
Use the back of your spoon to slightly flatten/imprint the drops.
Sprinkle lightly with sea salt (optional but honestly just do it!)
Allow to sit for 20 minutes (if you can resist) then enjoy!
Put remainder in the fridge in an air tight container. I didn’t try freezing … but I bet you could!
