A touch of sugar and a dash of cayenne lend these lentils a perfect sweet and savory combination that will leave you feeling satisfied!
- 1 1/2 cups green lentils
- 1 tablespoon brown sugar
- 1 teaspoon garam masala
- 1 teaspoon curry powder
- 2 cloves garlic, minced
- dash of cayenne pepper (optional, I omitted because, babies!)
- 2 cups water
- 14-ounce tomato sauce
- salt to taste
- 3/4 cup coconut milk
- 2 tablespoons butter or ghee (optional)
- Put everything except the coconut milk & ghee into your Instant Pot. Manual, high pressure for 15 minutes. Natural release for about 10 mins.
- Stir in the coconut milk and butter. Taste and adjust seasonings.
